Carico’s Favorite:

Chicken Soup
3 pounds of chicken
3 qt. water
1 bay leaf
4 sprigs of parsley
2 tablespoons of salt
1 medium onion
¼ tablespoon pepper
1 tablespoon chopped parsley
4 carrots (if desired)
2 or 3 cubes chicken bouillon
2 cups fresh pasta

In a large Carico Ultra Tech pan on medium heat, place the chicken, the water, bay leaf, celery, and a tablespoon of salt. Cover with the Ultra Temp valve open. When it whistles, reduce the heat to low and close valve. Cook 2 to 4 hours, until the chicken is tender and the bones loosen. Chop the onion, peel the carrots and cut them in cubes, remove the chicken from the pan and the take remove the skin and the bones.

After straining the broth pour it back in the Carico Ultra Tech pan, removing the fat if necessary. Add the vegetables, 1 tablespoon of salt, pepper, parsley and the bouillon cubes. Cut the chicken in pieces (no bones) and add this to the broth. Boil on low heat until the vegetables are tender. In another Carico pan cook the pasta following the instructions on the package and add it to the soup. Boil on low heat for approximately 10 more minutes.
